Garlic scapes are the flowering shoots of hardneck garlic. Top Shelf trims the scapes and pickles the tender shoots in a pickle brine accented with Sriracha and chilis. They are low-medium spicy. They purchase their garlic scapes every year from Silver Spring Farm, an initiative of the Ottawa-Carleton Association for Persons with Developmental Disabilities (OCAPDD).
