Highland Blue is a tangy, rich, blue cheese made from 100% natural unpasteurized sheep’s milk. This decadent cheese is formed into tall, regal, and rustic wheels having a dense, semi-firm, antique-ivory coloured paste with prominent vertical teal-blue veining throughout, encapsulated in a mottled rind.
A tasting reveals full-flavoured overtones of butter and mushroom that are earthy and savoury with less salt and acidity than many blues.
